On October 3, the Xunta de Galicia will open the doors of its Casa de Galicia in Madrid to receive Luis E. Ramos as the new director of this institutional headquarters. Ramos, who has designed the complete programming for the first month since his arrival, will be introduced at a ceremony that will be attended by government representatives, prominent Galician figures, and leading exponents of Galician culture in Madrid.
As part of this event, the historic Madrid-based restaurant chain of Galician family origin, Viena Capellanes, has been chosen to create an exclusive dessert that will transport attendees to Galician traditions. The delicacy in question is a small glass that combines a chestnut mousse with a cherry gel, thus evoking the spirit of Galician autumn. It is a source of pride to see Viena Capellanes' commitment to its Galician origins," said the new director of the House of Galicia in Madrid, who also thanked the generosity of the Viena Capellanes family for their collaboration in this initiative.
The dessert, inspired by the traditional magosto —a typical autumn celebration in Galicia that commemorates the harvest of chestnuts— seeks to pay homage to Viena Capellanes' Galician past and present. Francisco Somoza, the chain's master pastry chef and creator of the recipe, explained that for the making of the dessert two native ingredients were used: the soft Galician chestnut and the delicate cherry. "With this dessert we have wanted to recall the Galician past and present of Viena Capellanes. To that end we have played with two native ingredients, delicious separately and spectacular when combined," Somoza explained.
The two textures, a light and airy chestnut mousse alongside a cherry gel with a more intense flavor, have been perfectly orchestrated to bring a piece of Galicia to the Spanish capital. This exclusive dessert, although designed especially for the ceremony, will be available for a limited time in the 26 stores that Viena Capellanes has spread across the Community of Madrid.
Luis E. Ramos also highlighted that "the history of Viena Capellanes is the history of entrepreneurial Galicia, the Galicia that strives day by day to build a better future." This event marks the beginning of a new phase at the Casa de Galicia in Madrid, with the promise to further foster the cultural and gastronomic ties between Galicia and the Spanish capital.
